Carimañola
Carimañola,
caribañola or caramanola, cassava cake, stuffed yucca, enyucado or boliño de
mandicoca is a typical fried food of some Latin American countries such as
Brazil, Colombia and Panama.It is a food based on cassava dough, stuffed with
meat ground seasoning, fresh cheese, shredded chicken, or other filling.
Ingredients
-(2000ml.) 2 liters of water
-(908g.) 2 pounds cassava, peeled and cut into
wedges
-(100g.) 2 beaten eggs
-(15g.) 5 garlic cloves, finely chopped
-(75g.) 1/2 cup onion, finely chopped
-(45g.) 1/4 cup finely chopped red bell pepper
-1 pound ground beef
-(135g.) 1/2 cup of MAGGI Panamanian Style
Tomato Sauce
-(17g.) 1/4 cup coriander, finely chopped
-(200g.) 1 1/2 cup wheat flour
-(60ml.) 1/4 cup vegetable oil
Steps
1. In a
saucepan over high heat, place the water and heat until it boils. Add salt and
yucca, and cook for 15 minutes or until soft. Remove from the water and put in
a bowl. Let cool to room temperature.
2. Grate
the yucca with a coarse grater, add the egg and knead with your hands until
obtaining a firm texture, cover the bowl and set aside at room temperature for
15 minutes.
3. In a
saucepan over medium heat pour the oil, fry the garlic, onion and paprika for 2
minutes.
4. Add
the meat to the saucepan, cook for 5 minutes, add the MAGGI® Panamanian Style
Tomato Sauce along with the coriander, lower the heat and cook for 10 minutes.
Turn off and let cool to room temperature.
5. Take
½ cup of the mixture (50g.), Using your hands, crush until it is ½ centimeter
thick.
6. Place
2 tablespoons of meat in the center of the dough, carefully close it by
pressing the edges, repeat with the rest of the dough and the meat.
7. Place
the carimañolas on a previously floured baking sheet. Refrigerate for 30
minutes.
8. Fry,
place on absorbent paper. Serve and taste.
